Hazel and Apple is the creation of two of the most recognized and recognizable figures in Irish bar hospitality, Sean Muldoon and Jillian Vose of New York's legendary Dead Rabbit.

Together they are pouring their decades of experience and expertise into this, their own passion project.

Regularly ranked among the world's best bartenders and cocktail creators, Jillian is also known for her drink’s menus and obsessive attention to detail. (Ask her about ice sometime, and you'll see.) Her experience, encyclopedic knowledge – particularly of Irish whiskey – and outstanding technical and communication skills mean that Jillian is in demand for workshops worldwide. She has co-authored three books on cocktails and Irish whiskey, including Paddy Drinks: Modern Irish Whiskey Cocktails.

Sean Muldoon

Sean has been the creative driving force behind Dead Rabbit since it opened in 2012. The bar has gone on to win every major accolade, including World's Best Bar (twice). Sean also created the much-loved Cuban bar BlackTail at Pier A, itself named Best New American Bar in 2017, and he remains the embodiment of these two renowned bar brands. Today, Sean is as passionate as ever about creativity and hospitality, and to date, he is the co-author of five books on the subject.
